Oatmeal Dark Chocolate Chip Cookies

These cookies were a hit at the boys monthly poker night. Aside from the oatmeal and rich dark chocolate, they loved the little bit of flavorful cinnamon that shone through. We feel better about eating cookies that have a hint of healthy in the oatmeal and dark chocolate, but let’s be real…this recipe calls for some indulgence! Our new favorite treat is dark chocolate and this recipe hits the spot when we are craving dessert. Try to eat only one, we dare you!

What You Need:

  • 2 cups of flour
  • 1 cup oats
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 2 sticks of butter
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 2 cups of dark chocolate chips

What You Do:

  • Preheat the oven to 350 degrees.
  • Mix together the flour, oats, baking powder, cinnamon, and salt in a bowl.
  • In a separate, larger bowl use an electric mixer to combine the brown sugar, granulated sugar, and butter. By the time you’re done, the mixture should be light and fluffy.
  • Add the eggs and vanilla into this mixture until it resembles a smooth paste.
  • Slowly add the flour and oat mixture into the larger bowl. Once everything is mixed fold in the dark chocolate chips.

  • Separate the dough into small balls and place on a cookie sheet covered in parchment paper. This will help cut back on the clean up and the potential for the cookies to get stuck!
  • Cook for 10 minutes or until the cookies look a nice golden brown! Remember the cookies will firm up after they cool. We love it when our cookies are soft and have a gooey center!

Let the cookies cool, or even better serve them warm with a nice glass of milk!
